I've read that interviews will only be necessary if USCIS feels there's a need for it, but I've also heard people talk about having to be detained for a few hours while biometrics is underway. And in terms of identity, will a Mexican consulate ID be considered valid?

Who are you hearing these ridiculous things from? Biometrics is a simple procedure that takes 10 minutes. You walk into one of the designated centers and they take your fingerprints. Most of the time these centers are not run by ICE but outsourced. They may have annoying people working there but they have no power to detain you. There is no detention, unless by detention, you mean the way we are detained in everyday living conditions. 

Interviews will be conducted only to clarify things like USCIS said. I’m sure USCIS can tell you more than me. I’d think they have no time to conduct interviews for the most part.

I’m not familiar with Mexican consulate ID - are you talking about a matricular? Then probably not. I’m not sure why people don’t just get passports and make things easier for themselves!
